This past Thanksgiving, I had the opportunity to spend time with some of my nieces and nephews that I don’t normally get to see. It was amazing being able to play with them, and they are all so cute! It made me realize how amazing mothers and fathers are – to be able to be so attentive, dedicated, patient and loving every minute of the day is incredible.
That being said, its a blustery day in LA, and I had a hankering for some pizza. As I was making the pizza, I realized that this is a quick, easy recipe that parents can use as a weeknight meal for their kids, all the while ensuring they are eating enough vegetables. It’s also perfect for a movie night in, or for a ladies night with the girls.
Recipe:
6 leaves of Basil, sliced
1 pre-made pizza crust
1 cup shredded mozzarella cheese
1 cup baby spinach
3 garlic cloves, minced
2 tbs olive oil
2 Romano tomatoes, sliced
salt and pepper, to taste
Pre-heat the oven to 450 degrees. Place pizza dough on pan or pizza stone. Drizzle with olive oil and sprinkle with salt and pepper. Distribute 3/4 cup of mozzarella onto pizza crust. Layer on spinach. Add one layer of tomatoes, then sprinkle on basil slivers on top. Spread garlic on top. Sprinkle remaining mozzarella cheese on top, drizzle more oil, salt and pepper. Bake for 10 min.



It looks good and tastes better =)
